The good agreement ⌄
Around the glass
His generous serving concludes the meal on a delicious note, effortlessly. He serves it very chilled, between six and eight degrees: the cold keeps the sugar from setting. One small glass is enough; it’s a wine to be savored rather than drunk.
Agreements
Foie gras — the richness of the wine matches the fat of the foie gras
Chocolate dessert — the sweet, caramelized notes of the wine pair well with the chocolate
Pickled cheeses — the sugar in the wine contrasts with the salt in the cheese
