The good agreement ⌄
Around the glass
Its spicy structure takes time to fully unfold in the glass. The tannins are firm at the opening and soften as the meal progresses. A carafe saves him a good half-hour.
Agreements
Game — the spices of wine respond to the game
Red meat in sauce — the structure of the wine holds the sauce
Cured cheeses — the firm tannins match the paste
